Broccoli Soup

Guess What!

Broccoli soup has one main ingredient.

Have you guessed it yet?

NO!

Well to eliminate all doubt it’s not chicken and it’s not cheese!

Why do I say that?

Well if you search for Broccoli Soup recipes you get both chicken and cheese as major ingredients and instead of following this path why not start with the basics i.e. Broccoli and water (to just cover the veg.) add veggie stock and or other mild flavoured veggies if desired.

Bring to the boil and simmer until tender (a fork or knife pierces the stalk with only a little resistance). This will usually take only five minutes or so.

Cooking for only a short time makes sure that most of the nutrition is not destroyed by the boiling process.

Use a stick-blender or upright blender to blend (try not to splash boiling liquid all over yourself, it’s not good for you that way!).

This is a very mild flavoured soup and you may decide to add more ingredients to add flavour and body. If you want to boost the amount of healthy greens you use try my:

Feel free to add Yogurt, milk, cream or grated cheese as you serve. You can even make pretty patterns as you stir it in.

If you like a bit of crunch in your soup try adding plain or garlic croutons.
