Kale Soup

When you’re slimming or just trying to eat healthier, there’s not much better than Kale Soup.

It’s got many of the best veggies in a tasty package.

Tastes good – Is good!

Ingredients:
Kale (I know you’d guessed that) – half a pack
Leek
2 Carrots
1/2 Parsnip
1/2 Finger Chilli (optional)
1/2 Stick Celery
Handful Spinach (fresh/frozen)
Veggie Cube
Mixed Herbs
Salt
Black Pepper
Water to cover

Method

Bung the whole lot into the soup maker or pan and switch on.
The soup maker will let you know when it’s ready.
Give the pan 15-20 mins of simmering and blend in a machine or with a stick blender. Try not to spill boiling liquid on yourself, the kids or even just the floor. Remember that if you manage to do so screaming doesn’t help, but it does alert you loved ones that it’s time to go for a walk to pick up dinner.
