Mock Chicken Pie

Ingredients

For Pastry

12 ozs Plain flour

Good Pinch of salt

6 tbs oil, marge, butter

4 – 6 tbs cold water

Method

Place the flour and salt in a bowl, mix in the fat until it disappears, add most of the water and mix into a paste, if it’s still a bit crumbly add some more water a little at a time until the crumbs are are combined (the bits on the edge of the bowl will happily join with the paste).

By hand mould it into a log and using a knife cut it in half. On a floured board roll out one half into a circle which is larger than the pie plate and place in the plate ready for the filling.

For Filling

3 medium mushrooms

Tin of Campbell’s Cream of Mushroom Soup

Frozen pack of Quorn Chicken Pieces

Frozen or tinned sweetcorn

Method

Slice the mushrooms and line the prepared plate with half of them. Add enough of the Quorn pieces to have a good spread across the pie. Sprinkle the sweetcorn onto this and add the remaining mushrooms. At this stage add a little black pepper but hold back on the salt (many people will find the soup has sufficient salt for them so dip a finger into the tin to try it.) Spoon the soup (it’s rather gloopy as it is still condensed so it may not pour) evenly over the filling.

On a floured board, roll out the second ball of pastry until it is larger than the plate. Wet the edges of the bottom layer of pastry before placing the top onto the assembled pie. Use your thumb, crimping tool or whatever to seal the top to the bottom. Trim the overhang with a knife, make a couple of holes in the top for the escaping steam. Brush the top with milk to make it turn golden. If you want to add a bit of decorative nonsense to the top of the pie now’s your chance. Cut the trimmings into your chosen nonsense, add them to the top not forgetting to brush them with milk.

Now pop the pie into an oven at 200 / 400 / regulo 5 for 40 minutes. Keep checking after 30 mins to ensure it doesn’t burn. Some people (my Gran), prefer to place it in an oven at 225 for fifteen minutes and then turn it to 180 for the next 30 mins. The choice is yours. As long as it turns golden it will be done.
